INGREDIENTS:

2 cups whole purpose flour

1/8 teaspoon kosher salt

1/6 cup cold water

1.2 stick high-quality butter

FOR SYRUP:

3/8 cup white sugar or as required

1/8 cup water

2 tablespoons water

2 cinnamon sticks

Add 2 lemons at will

FOR CUSTARD BASE:

1/7 teaspoon kosher salt

1 1/4 cup milk

8 large egg yolks

Add 2 teaspoons vanilla extract for good taste

PART 1:

  1. So combine flour and salt in a bowl. Also, pour the dripping cold water into it gradually as, If making a sauce and mix with an electric mixer. While you relax comfortably or do something that you enjoy doing all by yourself!

Then turn out the dough with a bench scraper onto a lightly floured surface, dusting with more flour. 

  1. Although flip to lightly coat both sides of the dough and dust again with flour. After holding the dough from underneath, Then use the heel of your hands to carefully lift and stretch it into a 1/8-inch-thick rectangle. While pulling out the edges; be careful not to tear them. So spread another 1/3 of the butter over 2/3 of the dough and fold as you did before; Then wrap in plastic wrap and freeze for 10 minutes.

PART 3:

  1. While To start cooking use your mixer and put a bit of flour in there. Then using the hook attachment, knead all the flour into the dough.
  2. If preheat the oven to 550 degrees. Grease up 12 cups inside a muffin tin. When combine sugar, 1/4 cup plus one tablespoon of water, cinnamon, and lemon zest in a cold non-stick pot. 
  3. Now boil over medium heat until you notice the temperature makes it to 210 to 215 Fahrenheit degrees.

PART 4:

  1. Although Whisk egg yolks with half of the milk. Then add sugar syrup and vanilla extract. Now mix until combined. So strain the custard into a glass measuring cup.
  2. While heating the oven to 350 degrees F. Then cut a foil covering the baking sheet with an overhang. If using, brush each of the tart shells with melted butter; But sprinkle blue cheese onto the tart shell evenly and place a few basil leaves on top. 
  3. Now bake in preheated oven until the filling is browned and bubbling for about 15 minutes. Then let it cool for 10 minutes. So sprinkle some sea salt on top as a garnish or serve warm.
