So spread another 1/3 of the butter over 2/3 of the dough and fold as you did before; Then wrap in plastic wrap and freeze for 10 minutes.

  2. If preheat the oven to 550 degrees. Grease up 12 cups inside a muffin tin. When combine sugar, 1/4 cup plus one tablespoon of water, cinnamon, and lemon zest in a cold non-stick pot. 
  3. Now boil over medium heat until you notice the temperature makes it to 210 to 215 Fahrenheit degrees.

  2. While heating the oven to 350 degrees F. Then cut a foil covering the baking sheet with an overhang. If using, brush each of the tart shells with melted butter; But sprinkle blue cheese onto the tart shell evenly and place a few basil leaves on top. 
  3. Now bake in preheated oven until the filling is browned and bubbling for about 15 minutes. Then let it cool for 10 minutes. So sprinkle some sea salt on top as a garnish or serve warm.
